Pumpkin Chocolate Chip Bread...

I finally made it, and I have to admit, it was DELICIOUS (if I do say so myself). Unfortunately, I can't take credit for the recipe. I can't remember where I got it, but it is super easy to make! There's nothing better than warm pumpkin bread on a fall afternoon to get you into the Halloween spirit!


Quick Pumpkin Bread
yield- 1 9x5 inch loaf

1 ¾ C flour ¼ t baking powder
1 t baking soda 1 t salt
½ t cinnamon ¼ t ground cloves
1 1/3 C sugar 1/3 C shortening
2 eggs 1 C canned pumpkin
1/3 C water or milk ½ t vanilla
½ C chopped nuts or chocolate chips

Preheat oven to 350 degrees. Sift together flour, baking powder, baking soda, salt, cinnamon, and cloves. In another large bowl, beat sugar, shortening and eggs until light and fluffy. Add pumpkin and beat. Add the dry ingredients in three additions alternately with milk and vanilla. Do not over beat. Fold in nuts or chocolate chips. Pour in greased pan and bake 1 hour.
